4 chicken breasts cut into 1 inch cubes
2 tablespoon of lemon juice
4 tablespoons of dark soy sauce
2 tablespoons of honey
2 blocks of thick noodles
8 spring onions
1 clove of minced garlic
A drizzle of sesame oil
1 teaspoon of toasted sesame seeds
Place the cubed chicken into bowl. In a separate small bowl add the minced garlic, lemon juice, 2 tablespoons of the dark soy sauce and the honey. Mix together well and pour over the chicken. Stir the chicken thoroughly, to ensure it is coated with the marinate and refrigerate overnight.
The following day, stir the marinated chicken again and put the chicken onto skewers (if using wooden skewers make sure you soak them in water for 20-25 minutes to prevent them burning). Grill for 5-7 minutes on either side or until the chicken is thoroughly cooked.
Meanwhile slice your spring onions into diamond shapes and fry until they have softened slightly. Cook the noodles, following the packet instructions and drain well. Add a drizzle of sesame oil and the remaining 2 tablespoon of soy sauce and stir well. Transfer the noodles to the frying pan, with the spring onions and stir fry for 1 minute.
Serve onto individual plates, sprinkle a few toasted sesame seeds over the noodles and place the skewers on top.
Serve immediately.
