4 chicken breasts fillets (without skin)
4 tbls smooth peanut butter
100ml soy sauce
Put the peanut butter in a bowl and mix in the soy sauce until it is nice and smooth. Cut each chicken fillet into bite-size pieces and add them to the peanut butter mixture. Mix until all the chicken is fully coated.
Cover the bowl with cling film and refrigerate overnight allowing the peanut butter mix to marinate the chicken.
The following day soak some wooden skewers in water for 25-30 minutes. Please make sure you do this or the wooden skewers will burn (alternatively use metal skewers). Thread the chicken strips onto the skewers and place under a hot grill for about 5 minutes on each side or until cooked thoroughly.
Serve immediately with a fresh crisp salad or serve as a side dish or starter to your chinese meal.
They are great for picnics and taste wonderful on a BBQ instead of grilling.
