3-4 chicken breasts, cut into cubes or strips
350g pasta
1/2 large broccoli, cut into small florets
1 small tin of condensed chicken soup
1 tbls olive oil
2 garlic cloves, minced
2 tbls wholegrain mustard
freshly ground black pepper
Cook the pasta as per the packet instructions. Approx 3-4 minutes before the pasta has finished cooking, add the broccoli to the pan to cook with the pasta.
Meanwhile, add your tin of condensed soup to a small pan and heat according to the tin instructions.
While the pasta is cooking, heat the oil in a large frying pan, saute pan or wok and add the chicken. Stir fry the chicken for about 8-10 minutes until it has coloured nicely, then add the garlic. Stir fry for a couple more minutes, then add the mustard. Stir again to make sure the chicken is coated with the mustard.
Now add the heated condensed soup and the well drained pasta and broccoli. Stir again to make sure all the ingredients are coated with the sauce and sprinkle over a little freshly ground black pepper.
Serve immediately.
If you prefer less sauce, simply add less condensed chicken soup.
