2 ready made pizza bases (either prepare your own or buy pre-made)
8 teaspoons of tomato puree
2 teaspoons of tomato ketchup
200g of grated mozzarella cheese
2-3 chicken breasts
1/2 green pepper
1/2 red pepper
2-3 teaspoons of curry paste
3 tablespoons of water
Pre-heat your oven to the temperature required to cook the pizza bases.
Cut the chicken into strips and fry in a little oil until they have cooked through and coloured. Add the water and curry paste to the pan and stir cintinuously until the chicken is fully coated with the curry paste. Do not over-cook or the paste will burn. Remove from the heat and keep warm.
Meanwhile, put the tomato puree and ketchup into a small bowl and mix together thoroughly.
Then take your two pizza bases and spread the tomato mixture, thinly, over the top of the bases. Depending on how much tomato topping you like, you may have some of the mixture left over.
Next sprinkle the pizzas with some of your grated cheese, finely slice the red and green peppers and place over the cheese. Then put on the curry coated chicken strips and sprinkle with more cheese.
Cook in your preheated oven, following the pizza base cooking instructions and until the cheese has melted and coloured.
Serve immediately.
Take-away and restaurant pizzas are really expensive for what they are. Try making your own for family and friends, for a fraction of the cost. Our Spicy Chicken and Cheese Pizza recipe is delicious and like most of our recipes, the pizzas are really quick and easy to make.
