Chicken Fajitas
A small amount of oil
1 green pepper
1 yellow pepper
1 red pepper
1 large onion
Fajita spices to taste
3 large chicken breasts
8 tortilla wraps
Cut the peppers and onion into thin strips. Add a little oil to a large frying or saute pan and stir fry the peppers and onion until they soften. Remove from the pan and add a little more oil.

 Cut the chicken breasts into strips and stir fry until the chicken is cooked through. Return the peppers and onion to the pan and add the fajita spices to your taste. Add a little water to make a sauce.

Continue stir frying for a couple of minutes then serve onto a sizzling dish if you have one (remember to heat the dish before serving, I prefer to stick it under a hot grill for about 10 minutes to get really hot. Please take extreme care when using sizzling dishes and make sure you have the correct base and lifting tool to handle the dish).

Serve with tortilla wraps.

Guacamole, soured cream, tomato salsa and cheese are optional extras, if required. They taste just as good on their own.
