Preheat your oven to whatever the cooking instructions states on the packet of puff pastry.
Boil your 4 chicken breasts until cooked thoroughly and keep warm.
Meanwhile, cut the block of pastry into 4, roll out sufficiently to cover your breasts and filling. Cut your bacon into small pieces and fry until nicely coloured and add them to the middle of your puff pastry. Then put 2 tablespoons of the grated cheese on top of the bacon and finally a cooked chicken breast. Season with salt and freshly ground black pepper.
Wrap the chicken with the pastry, sealing the join and turn over. Place onto a lightly greased baking tray and brush with a little milk. If you have any pastry left over, make a lattice pattern over the top of the chicken parcels and brush again with he milk. Cook in the oven until the pastry has risen and is cooked through.
Serve after a couple of minutes, allowing the cheese filling to cool a little.
Our Chicken En Croute recipe is basically chicken, cheese and bacon wrapped in puff pastry. It's an easy recipe but it tastes delicious. Leave for a few minutes before serving as the cheese filling will be very hot. Try them cold with a few pickles or take them with you on a picnic. They beat boring old sandwiches.
