Cajun Roasted Chicken & Veg
4 chicken breasts with or without the skin
1 courgette, medium thick sliced
1 small aubergine, cut into small chunks
A red pepper, cut into chunks
A yellow pepper, cut into chunks
1 white onion, roughly chopped
1 red onion, roughly chopped
About 10 small new potatoes, halved 
5 tomatoes, quartered
4 tbls olive oil
Cajun spices
Preheat your oven to 200C (180C for fan assisted ovens or gas Mark 6)

Place all of your chopped vegetables and tomatoes in a roasting tin, drizzle over the olive oil and mix thoroughly, ensuring all the ingredients are coated, and season well.

Lightly rub the chicken breasts (with olive oil and sprinkle them with a little cajun spices. Place the chicken breasts (skin side up) on top of the vegetables and drizzle a little more oil over the mixture.

Place the roasting tin into the preheated oven and roast for about 35-40 minutes or until the vegetables have softened and the chicken has coloured and cooked through.

 Drizzle with a little oil before serving.
