Blue Cheese Stuffed Chicken
175g blue cheese
4 chicken breasts
8 rashers of smoked streaky bacon
2 tablespoons olive oil
Salt and freshly ground black pepper to season
Preheat your oven to 200C (180C for fan assisted/ Gas mark 6).
Cut your blue cheese into small pieces.
With a sharp knife, make an incision down the side of each chicken breast, to make a pocket for your cheese. Season inside and out with a little salt and freshly ground black pepper.
Take your blue cheese and press it into the chicken pockets. Lightly press the stuffed breasts, to flatten the filling a little.
Add your olive oil to a frying pan and place over a medium heat.
Wrap 2 pieces of bacon around each breast and fry in the oil for approx 1 minute on either side. Then place the chicken onto a oven tray and cook in the oven for about 20-25 minutes (or until the chicken is thoroughly cooked. Make sure the chicken juices run clear).
Serve immediately with a selection of vegetables.
